How to Make Roasted Chickpeas

Roasted chickpeas are a crunchy, savory snack that are sneakily healthy! Here’s a basic recipe for how to make roasted chickpeas in the oven or air fryer, plus ideas for ways to spice things up beyond the basic recipe.

They’re a great alternative to chips or crackers, when you’re craving a savory snack. You can also use roasted chickpeas as a topping to add some crunch to salads, soups, stews, or tacos. They’re so versatile and delicious!

How to Season Roasted Chickpeas

If you haven’t tried roasted chickpeas, you are in for such a treat! If you’re roasting in the oven, toss the seasonings with the chickpeas before roasting. For the air fryer, I prefer to toss with half of the oil to start, then add the rest of the oil and the seasonings for just the last five minutes.

You can keep things simple with salt and pepper, or toss them in your favorite seasonings to customize them. These are some of the ways I like to spice up my own roasted chickpeas:

  • Ranch-Style – Toss them with dried dill, onion powder, and garlic powder to give them a ranchy flair.
  • Cheesy – When they’re done roasting, toss with a little bit of olive oil, nutritional yeast, and salt. You can also add garlic or onion powder to your cheesy roasted chickpeas.
  • Spicy – Try your favorite ground chili powder, plus a little bit of garlic and salt.
  • Curried – Curry powder, garlic, onion, and salt make tasty, spiced, curried chickpeas. Try using different curry powders to keep things more fun!
  • Chili-Lime – When they’re done roasting, toss with lime juice, chili powder, and – you guessed it! – garlic powder and onion powder.

Really, any spice blend you like is a good candidate for flavoring your roasted chickpeas. Start with the basic method for how to make roasted chickpeas below, then season to create the crunchy snack of your dreams!

Ingredients

  • 1 1/2 cups chickpeas, rinsed and drained (or 1 15-ounce can)
  • 1-2 tablespoons olive oil
  • 1/2 teaspoon of salt
  • 1 tablespoon lemon or lime juice (optional)

Instructions

    How to Make Roasted Chickpeas in the Oven

  1. Preheat the oven to 400F
  2. Toss all of the ingredients together in a large bowl.
  3. Arrange the seasoned chickpeas on a cookie sheet lined with parchment paper, making sure that they’re in a single layer.
  4. Bake for 30-45 minutes, stirring every 15-20 minutes, until they’re nice and crunchy.
  5. Store in an airtight container in a cool, dark place for up to 3 days.
  6. How to Make Roasted Chickpeas in the Air Fryer

  7. Toss the chickpeas and half of the oil together in a large bowl
  8. Transfer to your air fryer basket, and cook at 400F for 15-22 minutes, shaking every 7-8 minutes, until they’re nice and crunchy. For the last 5 minutes of cooking, transfer the chickpeas back to your bowl, and toss with the remaining oil and the rest of the seasonings, then return to the air fryer for that final 5 minutes. This keeps the seasonings from burning.
  9. Store in an airtight container in a cool, dark place for up to 3 days.

Notes

The cooking time for this recipe varies from 15 minutes to 45 minutes, depending on how well you drained your chickpeas, whether you add more liquid or seasonings when seasoning, and what cooking method you choose. I split the difference for the “official” cooking time.
