4 Vegan Recipes From Chloe Coscarelli of By Chloe

“My goal was always to spread vegan cuisine far and wide,” says executive chef Chloe Coscarelli. With the breakout success of By Chloe, she’s well on her way. In just over one year, the New York City–based restaurant has sprouted three locations; one, in Silver Lake, California, was created in partnership with 365 by Whole Foods Market. It’s a lot for any 28-year-old, but Coscarelli knows her stuff: The author of three cookbooks, she’s been a vegan herself for more than 10 years. “There are so many different styles,” she says. “I went with something familiar and nostalgic, a take on American comfort food.”

Simple but satisfying dishes are served in the kind of bright, happy spaces that Instagram dreams are made of. “We have the same values as any vegan place, but our brand is playful and kitschy,” says cofounder and creative director Samantha Wasser, noting the decor’s swing chairs and throwback neon signs. The menu features plenty of crowd-pleasers, like veggie burgers, fries, shakes, and sweets (Coscarelli was the first vegan chef to win the Food Network’s Cupcake Wars, in 2010), plus greens on the side. “It’s less and less surprising to see vegetables thrown into the mix,” Coscarelli notes. “I have them with whatever I’m eating, whether it’s healthier or more indulgent.” It’s an approach her fans are likely to buy into. “Really, 90 percent of our customers aren’t vegan,” Wasser says. “But if you can bring vegan food into your life once a week or once a month, great! We want to be approachable.”
